Grilled Hawaiian Shoyu Chicken. I miss the days of Hawaiian plate lunch and luaus on the beach. shoyu chicken is as common at Hawaiian BBQs as burgers are in the mainland. Instead of marinating in a ziplock bag, they often fill a cooler full of the meat and cook up enough for the whole ohana (family).
Most people think that pineapple and Spam are the most Hawaiian foods, but Hawaii is a mix of many cultures and it picks the best of each. Shoyu is Japanese for soy sauce and the shoyu in this recipe is main on Oahu Hawaii. Don’t substitute Aloha Shoyu for regular soy sauce. It won’t turn out right.
4-5 Lbs Chicken Thighs, drums or breasts
1 1/2 Cups Aloha Shoyu : Link Below
1 1/2 Cups Water
1/4 Cup Brown Sugar
1 Tsp Black Pepper
1 Tbsp Ground Ginger
4 Cloves of Garlic
1 Tbsp Worcestershire Sauce
2 Tbsp Apple Cider Vinegar
Mix all of the ingredients together in a ziplock back and add the chicken. Let marinate for 8 hours or as long as overnight. Grill indirect at 275 degrees for about an hour then heat up the grill and direct grill the chicken until the skin is crispy.
